The Lumberjack Breakfast Skillet

This is a great and filling breakfast that my husband loves to make.

 Here’s a great recipe to make when you have a bit of time but it’s really delicious and uses up a lot of eggs! My husband Justin likes to make this on the weekends for the family or sometimes during the week for dinner for us.  It’s very filling and full of nutrition, plus it’s delicious and cheesy.  You could add bacon or sausage or nothing at all. Up to you!

Ingredients:
Lard (or butter/olive oil) <– Why Lard?
4 Large potatoes diced <– Grow Your Own
1 Cup onion chopped <– Grow Your Own 
12 Eggs Scrambled
1 Cup crumbled bacon or sausage (cooked and optional)
Cheddar Cheese <- Learn how to make Farmhouse Cheddar Cheese  HERE
Additional Items: Mushrooms, peppers, ham

Directions:

1. Heat up your Cast Iron skillet and add in 2 tablespoons of Lard and melt
2. Add in your diced potatoes and stir every 10 minutes
3. Keep an eye on the potatoes, if they start to stick add more Lard
4. Add in the onions after a half hour and toss
5. Add in the cooked bacon or sausage
6. When the potatoes are done and crispy time to scramble the eggs and add to the potato’s.
7. Cook until desired doneness sprinkle with cheese and serve Hot!

Note: Takes about an hour to 1.5 hours
