Banana Mini Muffins

These are the easiest Banana Mini Muffins ever to make! And guess what? Delicious to!

These lil bugers are delicious and oh so easy!! Recipe is very easily switched out for All Purpose Flour OR Gluten Free, simply replace 1:1. In my testing these muffins and oh there had to be many tests that were devoured we used my Gluten Free Mix and it works wonderfully. Using just a few simple ingredients you’ll have a snack to appease the kiddos or take to a party. Can be easily doubled or tripled.

Ingredients:

Makes 24 Mini Muffins

Directions:

  1. Grease mini muffin pan that contains 24 spots (Spray with homemade cooking spray) OR line with mini muffin liners
  2. In a large bowl or stand mixer with the paddle attachment add the melted butter, egg and sugar for 2-4 minutes
  3. Next add in the flour, baking powder, baking soda and mix for 2 minutes
  4. Peal and add in the mashed bananas until mixed (do not over mix)
  5. Preheat oven to 375°  F
  6. Using an ice cream scooper, scoop into the greased mini muffin tins until mostly filled
  7. Bake in the preheated oven for 10-12 minutes
