Weather – 15 Minute Dinner – French Toast – My Happy Place

Welcome February! Well I’ll welcome it and hope it goes quick, like 28 days quick! We just went through a cold snap and some crazy weather landed upon us a bit unexpected.  When I went outside I had to take a photo to remind myself during the hot days and I’m out in the garden that once upon a time it was barely seen under the blustery snow.  Up in Northern Michigan I’ll be seed starting Tomatoes, Broccoli, Cabbage, Peppers, Eggplant, and some Herbs starting in April.  Then I’ll be out in the warm soil planting early June.  I’m so excited!

My happy place is either in my Garden which I like to call my “Gardenio” or my Kitchen.  Either place it’s with food and I love good food. I look forward to the summer in my Gardenio, but I sure do love my kitchen.  It’s where I get to create meals with whatever I have on hand.  I like to look to see what I’ve worked hard on all summer either in the pantry stocked full of canned veggies, or the freezers full of delicious organic pasture raised meat. It fills my heart, and no matter how many times I create food this way I’m humbled and honored God has chosen me to steward the land this way, stock my pantry for my family this way and given me that drive to get ‘er done. What a blessing He creates with food!

Speaking of food! Have you been creating with Sourdough lately?  If youhave, yay for you!! Today I made French Toast using my Sourdough Sandwich bread and boy was it a hit! Even the husband liked it very much.  This recipe is a good way to use any bread that may have not turned out how you wanted or starting to dry out. Give it a try!

15 Minutes until dinner is ready? Yes please! Have you ever tried capers? Well you either love or hate them it seems. I personally love them and so does “most” of my family.  So I mix these in with shredded chicken and my favorite ramen noodles (no, not that cup kind with MSG) and a buttery garlic sauce, YUMMM!!!! Try this Garlic Butter Noodles & Capers Recipe

And on a last note, I recently was gifted this plaque from a friend who I reminded her of. Yes! I love it! And a little girl took one of her precious Lego characters and made an outfit for her and added a basket, she calls her the “Pioneer Girl” and made it specifically for me! This just downright melted my heart. To be treasured always!
