Neiman Marcus Chocolate Chip Cookies
Now here’s a spin on your ol regular chocolate chip cookies and it’s a delicious great spin! With a few different ingredients I think you’ll be quite impressed. My aunt wrote out this recipe for me many years ago.Â
To get these cookies to not taste & feel like chocolate chip & oat cookies you’ll need to grind up the oats to make a find powder. The key to these cookies!
Ingredients:
- 1 Cup Softened Butter
- 1 Cup Sugar
- 1 Cup Brown Sugar Packed
- 2 Eggs
- 1 Teaspoon Vanilla
- 2 Cups Flour
- 2 & 1/2 Cups Regular Oats (see note)
- 1/2 Teaspoon Salt
- 1 Teaspoon Baking Soda
- 1 Cup Chocolate Chips
- 2 Bars Hershey/Chocolate Bar Grated -1.55 oz each
- 1 & 1/2 Cups Chopped Nuts (pecans/almonds/your choice)
Directions:
- Cream together in your stand mixer with the paddle attachment the butter, both sugars, eggs and vanilla until creamy.
- Measure out and slowly add in the salt, baking soda, oatmeal & flour until fully combined.
- Add in the chocolate chips & nuts and stir with a large spoon or spatula.
- Preheat oven to 350 degrees F.
- Using a spoon drop tablespoon sized balls onto a greased (or use parchment paper) 2 inches apart.
- Bake 8-10 minutes or until golden brown. Remove and let cool on cookie racks.
Note: Make sure grind or pulverize your oats to a fine powder, that’s the ticket here!
I use my Kitchen Aid Food Processor to grind up the flour 1st, then I’ll mix the nuts and chocolate bar together and grind using the blade attachment for everything. You could also use a smaller grinder like this one here.Â
