Homemade Chocolate Zucchini Cake
Let’s sneak in some zucchini and not even taste it kind of cake! Here’s a delicious recipe for Chocolate Zucchini Cake just in time to use all the zucchinis that come in an abundance or you know the one’s that your neighbor’s drop off in the middle of the night. You know who you are.
You can also switch out the fresh zucchini for the shredded stuff you have in your freezer. Zucchini is fairly easy to grow and comes on heavy at times, a great way to preserve the zucchini is to shred it up and place it in freezer bags in the amounts you would want to use – I like 2 cups at a time.

Ingredients:
- 2 ¼ Cups all purpose flour <– Grab from Azure Standard
- ½ cup unsweetened cocoa powder
- 1 Teaspoon baking soda
- 1 Teaspoon Salt
- 1 Cup granulated sugar
- 1 Stick (1/2 cup) softened butter <– Learn to make your own
- ½ cup Applesauce
- 2 eggs
- 1 Teaspoon vanilla extract <– Learn to make your own
- ½ Cup buttermilk <– Learn to make your own
- 2 Cups grated zucchini (could also be thawed from a previous harvest)
- 1 Cup semisweet chocolate chips
- ¾ Cup chopped walnuts
Directions:
- Spray or butter 9×13 pan (Learn to make your own spray here).
- In a stand mixer beat together sugar, butter and applesauce until well blended. Add eggs 1 at a time beating well. Mix in vanilla and give a quick stir.
- In a medium bowl mix together flour, cocoa powder, baking soda, and salt.
- Slowly mix in half of the dry ingredients into the sugar butter mix and then half of the buttermilk.
- Alternate with the flour & buttermilk and mix well.
- Fold in the zucchini and mix well.
- Pour batter into your prepared pan and preheat oven to 325 Degrees F.
- Sprinkle nuts & chocolate chips on top.
- Bake 40-45 minutes until a toothpick inserted in the middle comes out clean.
