Homemade Breakfast Enchiladas

Here is a really simply and delicious breakfast enchilada that uses scrumptious sausage! We use pork sausage since we raise our own organic pasture raised piggies. You could save time by cooking the sausage & onion the night before and assembling the enchiladas the next day.  Another easy way to help out at breakfast is freezing any leftovers or making ahead of time and pop out of the freezer when needed.

Other ideas would be to use chorizo or add in mushrooms, peppers, garlic or whatever you’d like.  These Breakfast Enchiladas are a great way to start off the day with a hearty & delicious breakfast! You could also make these for dinner.   Feel free to switch it up and use corn tortillas instead of flour tortillas.  If your into Sourdough you could use homemade Sourdough Tortillas as well.

Ingredients:

 

Directions:

  1. Brown the sausage and onion and cook until done
  2. Placing your tortilla wraps flat, place approx. 1/3 cup mixture into each tortilla and roll
  3. Place each filled tortilla into a greased 9×13 pan
  4. In a separate bowl beat together the 12 eggs add in the 1 cup of milk and s&p to taste
  5. Pour the egg mixture over the tortilla’s
  6. Sprinkle with cheese and bake for 35 minutes (or until done) in a preheated oven at 350 degrees F
