Egg Quesadillas with Bacon

Delicious – Versatile- Easy

Need to make an easy yet delicious breakfast? Try making these Breakfast Egg Quesadillas!
You could switch out the bacon for sauce or use no  meat at all.  I use the organic tortilla shells from Costco. They are not cooked, you simply warm up a skillet and cook on each side for 1 minute approximately. They are the most economical way to buy organic tortillas.

Pro Tip:  Use one Tortilla Wrap and fold over, do not use 2 wraps on top of each other.  This way makes it incredibly easy to flip when cooking!

This freezes great! Simply cool down, place in a ziploc bag and place in the freezer. Use within 3 months.

Ingredients:

Directions:
1. If you need to warm up your tortillas do this first.  Lay the tortillas on your workspace and begin assembling.
2. Place a layer of cheese on half of the tortilla
3. Place a spoonful of scrambled eggs
4.  Sprinkle crumbled bacon
5. Another layer of cheese and fold over and slightly smoosh together to hold in place
6. Repeat with remaining items and stack on a plate
7. Warm up cast iron pans (or other skillet) to medium
8. Place 2 quesadilla’s on the pan and flip after 2 minutes (approx) when browned
9. Cook the other side and serve!

 

To Freeze:  Prepare as above and allow to completely cool. Place in a freezer Ziploc bag and place in the freezer. To reheat simply place in a 350 degree oven and bake for approx 10 minutes.
