3 Simple Breakfast Ideas

Let’s make some delicious and easy breakfasts together using EGGS!

Are you a breakfast person? Yeah me neither, but those kids sure are. Here are three very simple breakfast ideas using eggs (great protein!) that your family will enjoy and feel free to have FREEDOM in FOOD and change items out to what you have on hand in your fridge.

#1 Breakfast Casserole

Ingredients:
12 Eggs
½ Cup Milk
Veggies
Meat (Bacon/Sausage)
1 Cup Cheese + Extra for<–Make Your Own! Topping
Bread

Directions:
Grease the bottom of  a 9” pie plate. Rip up piece of bread and place on bottom. In a large bowl scramble the eggs, mix in the milk, veggies and meat if using.  Again have fun with this part! Sprinkle some S&P and 1 cup of cheese and pour onto the bread in the pie plate.    Sprinkle extra cheese on top and bake at 350 F for 30-40 minutes until a fork or toothpick comes out clean when tested in the middle.  Broil for 4 minutes to get the cheese nice and bubbly.

#2 Breakfast Sandwiches

Ingredients:
12 Eggs (depending on how many people you’re feeding)
Sliced Cheese<–Make Your Own!

Directions:
Scramble eggs in a large bowl and place in a heated pan (I love my cast iron) that had about 2 tablespoons of butter or lard and cook.  Towards the end you can then use your spatula to smash it down into sections. This will make it easier to place on the bread. Turn off burner. Top with cheese and place a lid on top to help melt the cheese.
Meanwhile toast the bread and spread butter OR place butter in a pan and grill up both sides of the toast.  I love using my Sourdough Sandwich loaf for this recipe!!
Using your spatula cut out sections of the egg and place on the grilled toast, top with another piece and done.

#3 Breakfast Rollups

Ingredients:
12 Eggs (depending on how many people you’re feeding)
Shredded Cheese<–Make Your Own!
Tortilla Wraps

Directions:

Scramble eggs in a large bowl and place in a heated pan (I Love my cast iron) that has about 2 tablespoons of butter or lard and cook.  Turn off burner.
Take your Tortilla Wrap (I use Costco’s Organic Flour Tortillas), lay this flat. Sprinkle cheese and scrambled eggs, roll tightly.  Place onto a heated pan and grill each side. This makes it easy to hold.
Cut in half and serve.
