Sourdough Discard Mini Pizza Bites – Bagel Bites
Easy, homemade snack or meal using sourdough discard

Looking for a delicious way to use up your sourdough discard? These mini pizza bites are the perfect solution! Made with simple, wholesome ingredients, this recipe turns leftover sourdough into soft, chewy dough rounds that are pan-cooked, topped with your favorite pizza ingredients, and finished under the broiler for a crispy, melty bite.
They’re quick, easy, and ideal for meal prepping, parties, or a fun family dinner. Plus, they store well and are freezer-friendly!
This recipe is completely organic, uses no yeast, and takes full advantage of your sourdough discard — reducing food waste while delivering great taste.


Ingredients:
- 2 Cups discard
- 2 Cups flour
- 1/4 Cup lard or olive oil
- 2 Tablespoons baking powder
- 2 Teaspoons salt
- Water — as needed for dough consistency
- Pizza Sauce
- Cheese
- Toppings

🕒 Two Hours Before Baking:
In a stand mixer with the dough hook, combine sourdough discard, flour, olive oil or lard, baking powder, and salt. Mix for 5 minutes until a smooth, elastic dough forms. Note: If dough feels too dry, add a tablespoon of water at a time.
Let the dough sit at room temperature for 1 hour to relax the gluten.
On a generously floured surface, press and stretch the dough out with your hands.
Pat or roll out to about 1/8 inch thick. You’ll get approx 14 pizzas using a 3″ circle cutter.If it springs back too much, rest for another 15 minutes.
While waiting, prep your pizza toppings: chop onions, peppers, etc.
Use a 3-inch cookie cutter (or your preferred size) to cut out dough circles. Gather scraps to make one final dough bite — no waste!
Heat a cast iron or heavy skillet over medium heat.
Place dough rounds onto the dry pan, cook until lightly browned, then flip and cook the other side.Transfer to a cookie sheet when done.
Repeat until all rounds are cooked.
Add a spoonful of sauce (try my [Homemade Pizza Sauce]!), cheese, and your favorite toppings.
Place tray under the broiler and cook for about 8 minutes, or until cheese is bubbly.
- OR you can keep cooking directly in the pans by placing the completed bagel bites and placing a lid on top and cook for several minutes until done on your stove top. Great if the power goes out and you run a gas stove.
