How to Cold Stratify Seeds
Some seeds need to experience a period of cold before they will germinate. In nature, this happens over winter. We can easily mimic that process in our own kitchen using the refrigerator.

My favorite method is simple, inexpensive, and doesn’t take up much space — a damp paper towel inside a zip-top bag. It creates a tiny greenhouse environment while the cold triggers the seed to wake up. I love that the bags can be reused again and again.
After their cold period is complete, I plant them indoors following the same method I teach inside my Step-by-Step Seed Starting Course, and then transplant them into my herb garden once the weather is right.
Simple Cold Stratification Method
What you’ll need:
- Paper towel
- Clean water
- Plate
- Zip-top bag
- Permanent marker

Step 1
Using clean water, dampen a paper towel. It should be moist but not dripping.
Step 2
Lay the damp towel flat on a plate and sprinkle your seeds evenly across the surface.
Step 3
Fold the paper towel over the seeds and slide it into a zip-top bag. Seal the bag.
Step 4
Write the seed name and the date on the bag. (You will thank yourself later.)
Step 5
Place the bag in your refrigerator.
Step 6
Check periodically to make sure the towel stays moist and the seeds are not drying out.
How Long Do They Stay in the Fridge?
Most seeds need 4–6 weeks of cold stratification.
The exact timing can depend on:
- Your average spring frost date
- The specific seed variety
Once the cold period is complete, plant them indoors as you would other seeds, then transplant outdoors after your last frost.
