Cheesy Orzo

Cheesy Orzo is a great side dish but it could also be dinner or lunch if you add in a protein like chicken or even ham. How yummy!! It’s pretty simple to make with only a few ingredients. I like to call this a 1PW – ONE PAN WONDER!!  Plus Orzo can be made with anytime of noodles so if your Gluten Free purchase those one’s  made out of corn. My land where we have lots of maple trees also has an amazing amount of ramps which I utilized for this recipe, but using garlic, onions or chives work wonderfully as well!

All my recipes are meant to be versatile so please feel free to use whatever you have on hand- that’s how we get Freedom in Food- we use what we can, where we can, how we can. You don’t have to follow things exactly, be creative and let loose!!

Ingredients
4 Ramp Bulbs or 3 Garlic Cloves *
1 Pinch Red Pepper Flakes
2 Tablespoons Lard (olive oil, butter)*
1.5 Cups Orzo Noodles
3 Cups Broth *
1 Cup Cheese (any kind will do here) - Learn HOW to Make CHEESE!
1 Ramp Top Chopped or Chives *

Directions
1. Break out your favorite Cast Iron Pan and sauté the garlic in the lard (or butter/olive oil)
2. Once softened add in a pinch of Red Pepper Flakes and stir for one minute to release the scent
3. Add in the 1.5 cups of Orzo and stir to coat for 1 minute
4. Slowly add in the broth (be careful of splattering since the pans hot)
5. Cover and bring to a boil – boil for approx. 15 minutes or until soft
6.  Turn off the heat and stir in the cheese
7. Serve hot and top with the Chives and More Cheese if desired!
