Cheesy Enchiladas
These Cheesy Enchiladas are incredibly delicious! They also were pretty simple to whip up!! You could also use leftover taco meat if you’re like me and cook up 4 pounds at a time just to have extra on hand. We made these with organic tortillas from Costco – they are uncooked and I just warm/cook them up on a cast iron pan. You could also use corn tortillas as well. We use gound pork since we raise our own organic pigs but you can use any ground or shredded meat. Get ready for dinner with these delicious Cheesy Enchiladas that’ll have your family coming back for seconds! So make plenty, double the recipe even, triple it and freeze some!
